
Here are some of my favorite recipes to bake during the quarantine.
UPDATED 5/26/20!
Dutch Pancakes
Ingredients:
-
1/2 cup All Purpose Flour
-
3/4 cup Milk
-
1/2 tablespoon Vanilla Extract
-
2 Whole Eggs , lightly whisked
-
1/4 cup Caster Sugar
-
1/4 teaspoon Salt
-
3 tablespoons Butter (unsalted)
-
Preheat the oven to 380°F. Take a medium size skillet or cast iron pan and melt unsalted butter in it on medium heat. Set it aside.
-
Now mix remaining ingredients together in a bowl and blend until foamy. It might be slightly lumpy but that's ok.
-
Pour the batter into the skillet and bake it in the oven for about 20 minutes or until it becomes all puffy and lightly browned across the top, and darker brown on the sides and edges (like the picture).
-
Serve it with toppings of your choice: powdered sugar, squeezed lemon, butter, chopped nuts, etc. Chopped nuts or fruit can be included in the batter so they will be hot when served.

stuffed oatmeal cookies
Ingredients:
-
1/2 cup + 6 tablespoons softened butter
-
3/4 cup brown sugar
-
3/4 cup white sugar
-
2 eggs
-
1 teaspoon vanilla
-
2 cups flour
-
1 teaspoon baking soda
-
1 teaspoon ground cinnamon
-
3 cup oats
-
1 cup choice granola
-
Optional: Mashed banana, dark chocolate chunks, raisins, walnuts, etc.

Heat the oven to 350°F.
-
Mix wet ingredients thoroughly.
-
Add dry ingredients and optional ingredients.
-
Shape dough on parchment paper on a cookie pan.
-
Bake 8-10 minutes or until crisp around the edges.


Pecan & Maple banana soft-serve
Ingredients:
-
4 large frozen bananas, sliced
-
2 teaspoons hot chocolate mix*
-
2 tablespoons maple syrup
-
1/4 cup chopped pecans
-
Peel bananas and freeze them for 4 hours or until firm.
-
Cut up frozen bananas and process (in a food processor) until smooth
-
Add hot chocolate mix and maple syrup and process until all the ingredients are combined.
-
Add chopped pecans and pulse shortly until combined.
-
Serve with optional toppings: pecans, whipped cream, chocolate chunks, banana, chocolate syrup, etc.

* If you love chocolate as much as I do, add more than 2 teaspoons (4) of hot chocolate mix to taste!

Red Velvet Scones
Ingredients:
-
2 1/2 cups flour
-
1 box red velvet cake mix
-
12 tablespoons cold, cubed butter
-
1+ cup mini chocolate chips
-
3/4 cup heavy cream
-
Preheat the oven to 400°F.
-
Prepare pans with parchment paper
-
Mix flour and cake mix. Cut cubed butter into small pieces and knead into the flour mix until the ingredients are a coarse texture. (The kneading is a very important step and WILL take time.)
-
Combine heavy cream with mixture. If the mixture is dry and does not hold shape, add additional cream.
-
Add chocolate chips.
-
Roll out batter onto a surface with flour and create flat balls.
-
Place balls onto the pan with an inch or so of space between each.
-
Optional: Top the balls with heavy cream and Turbinado or a large crystal sugar.
-
Bake for 20-25 minutes or until the center is fully cooked and the edges are golden brown.



S'mores French Toast
Ingredients:
-
1 cup warm milk
-
4 tablespoons hot chocolate mix
-
3 eggs
-
1 teaspoon vanilla extract
-
6 pieces of choice bread (I recommend cinnamon swirl bread)
-
1 cup chocolate chunks or bar (Substitute Nutella spread if desired)
-
Choice size marshmallows (They should cover one slice of bread)
-
Heat pan/ griddle with butter.
-
Mix warm milk and hot chocolate mix.
-
Add mix to eggs and vanilla extract and combine. When combined, put in a large bowl or on a plate.
-
Dip one side of first slice of bread in egg mixture and sufficiently soak. Place soaked bread on pan/griddle.
-
Place chocolate chunks and marshmallow on slice of bread on pan/griddle.
-
Soak one side of second piece of bread. Stack second piece on top of marshmallows and chocolate to create a sandwich.
-
When first piece of bread is toasted, flip and wait for other piece to toast as well.

Cinnamon Rolls
Ingredients:
The dough
-
2 cup warm milk (body temp)
-
1/2 cup sugar
-
1/2 cup melted butter
-
2 1/4 teaspoon active dry yeast
-
4 cups flour
The filling​
-
3/4 cup brown sugar
-
3/4 cup softened butter
-
2 tablespoons ground cinnamon
The kneading​
-
1 cup of flour + extra (for kneading)
-
1 teaspoon baking powder
-
1-2 teaspoons salt
The frosting​
-
4 ounces softened cream cheese (room temp)
-
2 tablespoons melted butter
-
4 tablespoons milk
-
1 teaspoon vanilla extract
-
1 cup powered sugar
THE DOUGH​
-
Stir warm milk, sugar, and melted butter in a large bowl until combined. Add active dry yeast and stir again until all yeast submerged in wet.
-
Leave mixture for 10 minutes in a warm place to allow yeast to bloom.
-
Add 4 cups of flour and stir until thoroughly combined without many lumps.
-
Cover with saran wrap and place in a warm place for 1 hour.​
THE FILLING​
-
Mix brown sugar, (VERY) softened butter, and cinnamon.
THE KNEADING AND BAKING​
-
After one hour, yeast mixture should have doubled in size. Add 1 cup of flour, 1 teaspoon of baking powder, salt.
-
Stir dough and pour out on surface with extra flour. Use as little extra flour as possible, but don't allow the dough to be sticky. If the dough sticks, add flour.
-
Knead dough for 10 minutes until smooth.
-
Roll dough into rectangular shape roughly 1/2" deep.
-
Add filling to the edges and spread it evenly.
-
Roll the dough with filling from one direction to the opposite direction to make a tube. Make sure the role is rolled evenly and stretch if necessary.
-
Use unflavored dental floss or a knife to cut the rolls.
-
Butter the bottom of choice pans and place rolls into pans. Leave room for the rolls to expand! Don't pack them together.
-
Cover rolls with a towel and let them sit (proof) for 35-45 minutes. They should grow to twice the size.
-
Bake the rolls for 25-30 minutes at 350°F. Check for the middle role to be cooked.
THE FROSTING​
-
Mix room temp cream cheese, melted butter, milk, and vanilla extract until combined. Then gradually add the powdered sugar.
-
Allow rolls to cool around 10 minutes before frosting.

2 ingredient chocolate brownies
Ingredients:
-
4 eggs, whites and yolks separated
-
9 oz semi sweet chocolate
-
Preheat the oven to 325ËšF (170ËšC).
-
Place the chocolate in a microwave-safe bowl and melt completely, about 1 minute.
-
Separate the egg yolks and egg whites. Using a hand mixer, whisk the whites until soft peaks form.
-
Add the yolks, one by one, into the bowl of chocolate, whisking to combine.
-
Using a rubber spatula, gently fold â…“ of the whipped egg whites into the yolk and chocolate mixture. Repeat with the remaining egg whites, adding â…“ at a time.
-
Add extra ingredients of choice: walnuts, coconut, chocolate chunks, etc.
-
Spray cupcake tin, round cake pan, or 8x8 pan.
-
Pour the batter into the tin or a pan.
-
Bake for around 30 minutes. (depends on pan or tin)
-
Once the cake is cool to the touch, gently invert it onto a plate.
This is one of my favorite simple yet yummy recipies from the Tasty website.
Simple+ Healthy Pancakes
Ingredients:
-
2 medium ripe bananas
-
1 large egg
-
3 tablespoons natural peanut butter
-
2 cups rolled oats
-
1 1/2 teaspoon baking powder
-
1 tablespoon real maple syrup
-
1 1/4 cups milk (almond milk or cow's milk are both fine)
-
Heat griddle to medium heat.
-
In a blender, mix banana, egg, peanut butter, oats, baking powder, maple syrup, milk, and salt. Blend on high speed until smooth.
-
Spray griddle with nonstick spray or spread butter on griddle. Add 1/4 cup of batter to the griddle and cook, until golden brown and bubbles form all around the edges (about 2 minutes per side).
-
Serve with extra ingredients of choice: sliced bananas, fruit, syrup, chocolate chunks, etc.

Mug Banana Bread
Ingredients:

3 tablespoons flour
-
3 tablespoons brown sugar
-
½ teaspoon brown sugar
-
â…› teaspoon salt
-
1 egg
-
1 tablespoon milk
-
1 tablespoon oil
-
¼ teaspoon vanilla
-
1 banana, mashed
-
In a small mixing bowl, add all dry ingredients and mix until combined.
-
Stir in wet ingredients and banana until evenly mixed.
-
Transfer to a mug and microwave for 90 seconds.
-
Garnish with extra ingredients of choice: banana, peanut butter, chocolate chunks, whipped cream.
